I always like to make Nigerian fried rice because of the combination of the vegetables that I enjoyed while eating it.

Everybody can eat and make fried rice even the vegetarians by just avoiding using meat but only add vegetables.

Whenever I’m making fried rice for my family of five, I normally cook about 7-8 cups of long grain basmati rice, because they’ll ask for more like Oliver twist just because of its deliciousness and sweetness. So that everyone can eat to their satisfaction.

Ingredients

8 cups of long grain basmati rice

1 onion medium sliced

2  garlic cloves

1 teaspoon thyme

½ cup of vegetable oil

1 teaspoon curry thyme

400 gram of peeled shrimp

1 teaspoon pepper (chili or scotch)

300g of gizzard

1 teaspoon pepper (white or black)

6-8 seasoning cubes

1 teaspoon Maggi liquid (optional)

Vegetables: Carrot, sweet corn, green beans (peas),  mix red ball pepper

1 teaspoon curry thyme

Add salt to taste

Cooking Preparation

It is highly recommended to do some preparation before you start cooking so that you will not get trapped along the line.

*Seasoning your gizzard and cook for about 10-15 minutes, and later fried for 5 minutes and diced

*Diced carrot and mix red ball pepper and set aside

*Parboil long grain basmati rice until it’s almost done. I usually add a little salt to already given it a taste.

Note: I always fried all my vegetables together and pepper sauce for about 5-10 minutes and seasoned. I love to enjoy uniformity in my fried rice when all are mixed together. It makes cooking easier and just be doing mixing and your fried rice is ready to enjoy.

Directions

  1. Parboil the long grain basmati rice for about 20 mins, until the rice is soft.
  2. Break up the clumpy rice before starting.
  3. Preheat your pot on medium-high heat with about 6-8 teaspoons of vegetable oil.
  4. Pour diced onion and add the vegetable one after the other, stir very well.
  5. Add diced gizzard and shrimps and stir
  6. Curry, thyme, black or white pepper, maggie should be added and salt to taste
  7. Use another pot for the mixing
  8. Add the rice to the pot on low heat
  9. Follow by vegetables, and stir vigorously
  10. Add 10 teaspoons of chicken/beef stock, stir and steam for 5 minutes
  11. Check the taste and add salt and stock if necessary.
  12. Mix everything together vigorously
  13. Your fried rice is ready to be served and enjoy it when it’s still warming.

Nigerian fried rice is normally served with plantain and grilled chicken/beef alongside any drinks of your choice.
